Hi Lloyd,
Welcome, you will enjoy it here, people with more technical knowledge than me will doubtless be along soon with advice on what might need to be addressed at the outset. For me, it was all about seat, bars and screen being changed for more long-distance comfort, utterly stonking engine! A lot will depend on how you fit the bike physically, so I guess what needs to be done in that regard will become obvious as you rack up the miles. Lots of advice on old threads.
Cheers,

Must be one of the last GTRs still in showrooms.  I'd suggest looking at crash bars.  R&G are nice, not cheap but look good.  Quite unobtrusive

Welcome along Lloyd, you wont be disappointed with the GTR

First mod to consider would be a radiator guard IMHO

canyon cages are able to provide rear crash bars, search on here will help you.
I dont know about panniers falling off apart from the pannier securing catch recall which only applied to 2008/9 model year bikes, if you take the GTR off road then you may disprove this fact
Cruise control is something that IMO should be standard on the GTR again search on here and you will find help/answers
I had an Akrapovic end can on my GTR it was much lighter, better looking and sounded great, other pipes such as Beowulf are also popular
Re mapping isnt necessary

Best and cheapest for throttle response, check cable adjustment and try and remove all freeplay without affecting the idle speed. The recommended freeplay seems a bit excessive and can give poor low speed response.
